Double Chocolate Chip Microwave Cookie Recipe (Vegan)
Instead of making a whole batch of cookies, make an easy microwave cookie that's the perfect single serving dessert! Soft and decadent, this flourless double chocolate chip cookie takes less than 1 minute, and it's paleo and vegan!

In a small bowl, whisk together almond butter, maple syrup, almond milk, and vanilla extract until smooth and free of clumps.
Add cocoa powder and stir until a thick and sticky dough forms.
Line a microwave-safe plate with parchment paper, and transfer the dough to the parchment paper. Use your hands to shape into a round mound, about 1/2 inch tall.
Add chocolate chips to the top, pressing them into the dough with your hands.
Microwave for 40-60 seconds depending on the strength of your microwave. Mine took 40 seconds. Overcooking can result in a dry cookie.
Cool for 10-15 minutes, then enjoy! If you want, you can sprinkle with flaky sea salt and/or serve with a scoop of vanilla ice cream.
