I’ve made chocolate mug cakes and this microwave mug cookie plenty of times, but one of my readers recently asked if I can make an actual cookie (in cookie shape) in the microwave. I’ve never done it before, but I had to make this happen. With some testing and experimenting, I’m so excited to share these easy Chocolate Chip Microwave Cookies that come together so easily.
This recipe is flourless, which means it’s naturally gluten-free, and it has just 6 simple ingredients–a handful of pantry staples–but there’s no egg, no all-purpose flour, no fuss! You microwave for less than 1 minute, and you have an easy, decadent, and gooey chocolate chip cookie in no time.
It’s especially perfect for when you are looking for a quick treat that’ll satisfy your chocolate cravings and your sweet tooth and don’t want to turn on the oven. Serve with a scoop of ice cream or by itself– you can’t go wrong with this one!

Ingredient Notes
- almond butter: You can use any other nut or seed butter you have on hand.
- maple syrup: Making a keto microwave cookie? Feel free to substitute with sugar free syrup like this one.
- almond milk: I used almond milk because it’s what I had on hand. But you can use any dairy-free milk for this recipe.
- vanilla extract
- cocoa powder: Cacao powder will also work!
- chocolate chips: For paleo and vegan chocolate chips, you can use these. Otherwise, use your favorite dark chocolate chips.
How to Make This Microwave Cookie Recipe
To make an eggless chocolate chip cookie (that’s right–no egg yolk, no egg whites!), you just need to make the batter before shaping it into a cookie on a plate. Here are the step-by-step instructions to make this delicious treat!
- Whisk together the wet ingredients: almond butter, maple syrup, and almond milk in a bowl until smooth and free of clumps.
- Add cocoa powder and stir. The dough should be thick and sticky.
- Line a microwave-safe plate with parchment paper and transfer the dough to the parchment paper. Shape the dough into a round mound about 1/2 inch tall.
- Pressing in chocolate chips into the top of the dough ball.
- Microwave cookie dough for 40-60 seconds, depending on the strength of your microwave. Check after 40 seconds. Overcooking can result in a dry cookie. This is an egg-free microwave cookie, so it’s completely safe to eat slightly undercooked. Who doesn’t like a gooey cookie with melty chocolate chips?!
- Cool for 10-15 minutes, then enjoy! If you want, you can sprinkle with flaky sea salt and/or serve with a scoop of vanilla ice cream.

You probably have a high-powered microwave and cooked it for too long. Adjust the cook time to less time and try again!
Add more liquid will make the cookie spread a bit too much. Instead of maple syrup, try adding 2-3 tsp coconut sugar.
Since you are only making 1 large cookie, you’ll most likely not have any leftovers. But if you can’t finish it or you are making it ahead of time, you can store it in an airtight container for up to 3-4 days.

- Microwave for 40-60 seconds depending on the strength of your microwave. Mine took 40 seconds. Overcooking can result in a dry cookie.

For a healthy cookie it is good. If you are expecting butter and sugar taste then you might be disappointed. However, with real cookies I have a hard time with only eating one or 2. With this I found I hard to finish the one. It was enough to get that chocolate sweet tooth but probably not something I could binge on so I think that is good. Maybe I was not super hungry because I did eat dinner not long before I ate this but maybe because of the almond butter I filled up faster. For the most part i eat healthy but the sweet tooth binging is where I fall short. Hopefully this is something I can incorporate to curve the sweet tooth but not add inches to my waist line. 🙂
