Preheat oven to 350 degrees, and line an 8x8 baking dish with parchment paper. Add butter, white chocolate, and pistachio butter in a large microwaveable bowl. Microwave for 30 seconds at a time, or use a double boiler until the butter is melted and the white chocolate pieces are softened. Remove from heat and stir.
1/4 cup + 2 tbsp butter, 8 oz white chocolate bar, 1/2 cup pistachio butter
Add sugar, salt, and vanilla extract, and stir to mix.
1/2 cup granulated sugar, 1/2 tsp sea salt, 2 tsp vanilla extract
Add in eggs, and whisk until smooth.
2 large eggs
Fold the flour in until just combined. Don't over mix.
1¼ cup gluten free all-purpose flour
Gently fold in pistachios and/or white chocolate chips, if using. Transfer to the prepared baking dish, flattening out the top. Bake for 25-30 minutes, until light browned on the edges and set in the middle. The middle may seem a bit soft, but it'll firm up as it cools.
OPTIONAL: 1 cup chopped roasted pistachios or white chocolate chips
Cool completely, then slice into 16 squares. Enjoy!
