- 1 head of cauliflower
- 2 tbsp chopped parsley
Lemon Turmeric Dressing
- 3 tbsp avocado oil
- 2 tbsp lemon juice
- 3 garlic cloves minced
- 1 tsp turmeric powder
- 1/2 tsp sea salt
Preheat oven to 425 degrees F.
Chop the cauliflower into bite-sized florets, making sure that the florets are similar in size.
Whisk together all ingredients for the lemon turmeric dressing.
Place the cauliflower florets in a large bowl, and toss with the dressing.
Spread out the cauliflower on a baking sheet in a single layer.
Roast in the oven for 20-25 minutes until tender and golden brown, turning the pan halfway through.
Sprinkle with chopped parsley before serving.
