Instructions

  • Put the apple in a food processor and process until chopped into tiny bits.
  • In a mixing bowl, stir together almond flour, coconut sugar, cinnamon, nutmeg, and sea salt.
  • Add apple bits, coconut oil, and vanilla extract. Stir until a dough forms. Add a bit more almond flour if the dough is too wet.
  • Use your hands to roll the dough into about 10 balls.
  • Make the cinnamon sugar coating by combining coconut sugar and cinnamon on a plate. If you want the coating to stick better, you can grind the coconut sugar to a fine powder in a blender or a coffee grinder then combine with cinnamon.
  • Roll each donut hole in the cinnamon sugar to coat evenly.
  • Enjoy immediately, or chill in the fridge to firm up a bit.
