- 1 avocado
- 2 cups almond milk or your favorite dairy-free milk
- 1 frozen banana cut into chunks
- 2 tsp maple syrup or more to taste
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract

Combine all ingredients in a high-powered blender.
Blend until smooth and creamy. Taste to add more maple syrup, if needed.
Pour into 2 glasses, and serve. Top with coconut whipped cream and mint leaves, if desired.
