  • In a small saucepan over medium heat, combine cashew milk, coconut sugar, pumpkin puree, pumpkin pie spice, and vanilla extract. Whisk to combine and froth.
  • Remove from heat as soon as you see the mixture start to bubble.
  • In a small bowl, whisk together matcha and hot water with a matcha whisk or a handheld frother.
  • Pour the milk mixture into a mug, then top with the whisked matcha. You can serve over ice to enjoy cold. Stir to combine.
  • Sprinkle with pumpkin pie spice to garnish. Enjoy!
