Sweet Potato & Chocolate Chip Muffins

These Paleo Sweet Potato Muffins with Chocolate Chips are so incredibly easy to make, and are perfect for breakfast or a quick snack.

INGREDIENTS

Sweet Potato

Eggs

Maple Syrup

Coconut Flour

Cinnamon

Vanilla Extract

Coconut Oil

Chocolate Chips

INSTRUCTIONS

Mix mashed sweet potatoes, eggs, maple syrup, coconut oil, and vanilla extract together until smooth.

Whisk flour, cinnamon, baking soda, and sea salt until the batter is smooth. Stir in chocolate chips.

Evenly divide the batter into the prepared muffin tin. Bake for 15-20 minutes.

Test if the muffins are cooked by using a toothpick. Allow to cool for 10 minutes and ENJOY!
