  • Preheat the air fryer to 370 degrees F.
  • Cut each slice of toast into 3 sticks lengthwise.
  • In a bowl, whisk together eggs, coconut milk, coconut sugar, ghee, vanilla extract, and cinnamon.
  • Working one at a time, dip each stick of bread into the egg mixture to coat on all sides.
  • Generously spray the air fryer basket or rack with cooking oil.
  • Lay the coated sticks in a single layer in the basket without touching each other.
  • Air fry for 5 minutes, then flip with a spatula, and cook for another 3-5 minutes until golden brown and crispy. Keep a close eye so they don't burn.
  • Serve warm, with powdered sugar and/or maple syrup.
