Paleo Blueberry Sour Gummies

I’ve been making gummy treats at home ever since I learned about grass-fed gelatin and its amazing health benefits, especially when it comes  to gut healing and skin health. It brings me back to my childhood when I would beg my mom to get me gummy treats all the time. They are so chewy and yummy, and I love how there are endless variations when it comes to their flavors and shapes, especially when you make it at home.

These AIP & Paleo Blueberry Sour Gummies are my newest favorite flavor with a delicious combination of blueberries and lemon juice. It contains all real food ingredients with none of that crap that’s in conventional gummy candies like food colorings, starches, and processed sugars.

Paleo Blueberry Sour Gummies

If you don’t have a gummy mold, you can just make these in a small baking dish or a silicon ice tray. But I bought these adorable molds to make these healthy gummy bears and I’m seriously obsessed with how they turned out!

These Paleo Blueberry Sour Gummies are also great for a holiday treat because you can get themed molds to make different shapes. Halloween is just around the corner, so I made a few gummy worms in addition to the bears to get into the festive spirit. Aren’t they so cute? Hope you enjoy this super fun and nutritious recipe!

AIP & Paleo Blueberry Sour Gummies

Ingredients 

  • 1 1/2 cup blueberries, fresh or frozen
  • 1 cup lemon juice, or lime juice
  • 3 tbsp raw honey
  • 2/3 cup grass-fed gelatin, Use code GREATGRANDMA10 for 10% off your entire order

Instructions 

  • Combine blueberries, lemon juice, and honey in a blender, blend until completely mixed. Pour out the contents into a saucepan on the stovetop.
  • Add gelatin, and whisk until it thickens.
  • Turn on the heat to low and whisk for 5 minutes, or until the mixture thins out.
  • Pour into silicon molds (I have these), or a small baking dish.
  • Transfer to the refrigerator for 1 hour until the gummies firm up.
  • Remove the gummies from the molds. If you used a baking dish, cut them into bite-sized squares.
  • Enjoy immediately or store them in the refrigerator.

    I take back my previous comment – 120g is too sweet! I think I do more like 100-105g of honey.

    I’ve made these several times in blueberry and strawberry versions, our kids (and my husband and I) love them! I make them every time we do a ~6 hour road trip to visit home. I use a glass baking dish lined with saran wrap and cut some into shapes and then when my hand gets tired, I cut the rest into strips with a pizza cutter. Our kids call them “snakes”. So much quicker and easier! I also do closer to 6T of honey, about 120g.

      It’ll last about 4-5 days in the fridge.

    Hi & thanks for this recipe! I made these the other night with a dessertspoon of Erythritol instead of the honey which tastes good. The consistency is a little squishy out of the fridge & difficult to get out of the silicone moulds. Is this normal or is there a trick with the moulds? I popped them in the freezer & they are much easier to get out… any feedback appreciated! thank you ๐Ÿ™‚

      It might be the brand of gelatin you are using. You might need to use more of it if the gummies don’t firm up enough.

      Just the powdered form that it comes in!

    Is there anything that I can substitute for the honey to keep these lower carb? Liquid stevia? If I omit the honey would it change the texture at all?

      Yes, you can use drops of liquid stevia. I don’t work with 0 carb sweeteners so you would have to test out how much to use. You can keep everything else the same.

    If you take out the lemon juice will they not be sour? My little one won’t like the sour flavor so much

      Yup! You can just substitute with equal amount of water.
