Not only are they incredibly quick and easy, I love that you can make a single serving dessert whenever you get a craving without having to worry about leftovers or going overboard on sugar. Gluten Free Cinnamon Roll Mug Cake Recipe

While this is called a cinnamon “roll,” there’s actually no rolling of the dough and you don’t have to do too much work to enjoy that classic dessert we all love. Instead, cinnamon sugar is swirled into the simple batter and the result still very much resembles that rolled and layered look! Made without dairy or eggs, this cinnamon roll in a mug is also vegan if you use a vegan pancake mix. The whole thing so simple to make that even kids can help with this recipe!

Ingredients Needed

  • gluten free pancake mix: I don’t recommend using any regular gluten free flour like gluten free flour mix or almond flour. It won’t result in that fluffy, light texture. Pancake mixes are specifically formulated to get light and airy, which is why they work so well for this quick single serving cinnamon roll! This is my favorite gluten free pancake mix. If you are making a vegan version, you can use this mix.
  • baking powder
  • almond milk: Any other dairy free milk will also work.
  • maple syrup
  • coconut oil
  • sea salt
  • coconut sugar: Brown sugar will also work well in this recipe.
  • cinnamon
  • powdered sugar

How to Make Gluten-Free Cinnamon Roll in a Mug

  1. Grease a shallow mug or a ramekin, then combine all ingredients for cinnamon roll and whisk together with a fork. If the batter is too thick, add in some more almond milk until it resembles a thick pancake batter.
  2. In a small bowl, make the cinnamon sugar by mixing coconut sugar and cinnamon together.
  3. Sprinkle the cinnamon sugar mixture evenly over the prepared batter.
  4. Use a knife or a chopstick to swirl the cinnamon sugar into the batter in a circular motion until evenly incorporated.
  5. Microwave for 1 minute – 1 minute 20 seconds, depending on the power of your microwave.
  6. Combine ingredients for the sugar glaze until smooth. Drizzle over the cinnamon roll.
  7. Enjoy warm!

Can I Make This Gluten Free Cinnamon Roll Mug Cake in the Oven?

If you don’t have a microwave and still want to make this cinnamon roll in a mug, you can definitely make it in the oven! Just preheat the oven to 350 degrees F. Bake for 15-20 minutes. I would start checking at 15 minutes and do the toothpick test to make sure it’s baked through. Over baking will lead to a dry cinnamon roll, which we don’t want!

  • 2 tbsp powdered sugar
  • 1 tsp almond milk

Instructions 

  • In a greased shallow mug or a ramekin, combine all ingredients for cinnamon roll and whisk together with a fork. If the batter is too thick, splash in some more almond milk until it resembles a thick pancake batter.
    1/4 cup gluten free pancake mix, 1/4 tsp baking powder, 2 tbsp almond milk, 1 tbsp maple syrup, 1 tsp coconut oil, Pinch of sea salt
  • In a separate bowl, make cinnamon sugar by mixing coconut sugar and cinnamon together.
    2 tsp coconut sugar, 1/4 tsp cinnamon
  • Sprinkle the cinnamon sugar evenly over the prepared batter.
  • Using a knife or a chopstick, swirl the cinnamon sugar into the batter in a circular motion until evenly incorporated.
  • Microwave for 1 minute to 1 minute 20 seconds, depending on the power of your microwave. [Check Notes for oven instructions.]
  • Combine ingredients for the sugar glaze until smooth. Drizzle over the cinnamon roll.
    2 tbsp powdered sugar, 1 tsp almond milk

    this is my first time ever leaving a comment on a recipe but i was honestly about to create an account JUST to comment if i needed to because I CANNOT BELIEVE HOW GOOD THIS IS!!! for a mug/microwave bake, the texture is great. iโ€™ve tried so many failed mug recipes and this one is impossible to mess up. took me 3 minutes and โ€œbakedโ€ perfectly. all ingredients i had on hand and usually do have on hand. i also appreciated the serving size – just enough to fill me up.

    What if you dont have Microwave. Would the oven or airfryer work?

      Yup! You can bake in the oven for 15-20 min at 350 degrees.

    Would a regular GF flour blend work or is there something about the pancake mix in particular? Have you ever experimented with other flours?

      No a pancake mix will rise and fluff up while cooking. A regular GF flour won’t do that.

    This is awesome. I have no time to make cinnamon rolls and making cinnamon rolls for one is …weird. I used Birch Benders paleo pancake mix and it worked great. I used Lakato ‘powered sugar’, just 1 Tbsp and 1 tsp coconut butter and this worked great for the glaze too. This recipe is so good, I told my mom about it.

I loved that it was a single serving and can be instantly enjoyed since it is microwaved. thank you for this recipe!!
