I love Fall and Winter fruits, and it’s such a joy to add them into my baked goods. For this healthy vegan scone recipe, I combined both pomegranate seeds and fresh orange into a flaky and buttery baked treat for the perfect marriage of flavors and textures. They are such a festive breakfast or snack for the holiday season, and so easy to make too!

Vegan Gluten Free Scones Recipe with Pomegranate & Orange

The fresh pomegranate seeds in every bite with the citrusy flavor of oranges in these paleo scones are just the most perfect pairing. To make a light and flaky texture, I used a combination of almond flour and tapioca starch. The orangey glaze drizzled on top is such a beautiful addition, and I’ve been loving it with a side of a warm drink like matcha or coffee!

Ingredients in Pomegranate Orange Gluten Free Dairy Free Scones

There are two parts to this recipe: the pomegranate scones and the wonderful orange glaze. The glaze is optional but I highly recommend it because it gives such a wonderful sweetness and moisture! Here are the ingredients you need for these vegan gluten free scones:

  • almond flour: Make sure to use blanched almond flour for these gluten free healthy scones, not almond meal.
  • tapioca starch: Arrowroot starch will also work if that’s what you have instead!
  • baking powder
  • sea salt
  • coconut oil: For an extra buttery flavor, you can use ghee instead if you are making paleo scones (not vegan).
  • full-fat coconut milk
  • orange juice and zest: I find that freshly squeezed orange juice gives the best flavor!
  • maple syrup: If you aren’t vegan, honey can be used instead.
  • vanilla extract
  • pomegranate seeds: For a mess-free way to seed pomegranate, you can check out my tip here.

If you want to add a glaze to these gluten free orange scones, I provided two different options: one that is vegan and one that is paleo. They are both very simple to make, infused with orange juice, and just wonderful in flavor!

Orange Sugar Glaze (Vegan)

  • powdered sugar
  • orange juice

Coconut Glaze (Paleo)

  • coconut butter: I find that this coconut butter works best for melting. Some cheaper brands will actually separate when melted so make sure to use high quality!
  • coconut milk
  • orange juice

How to Make This Paleo Scone Recipe

  1. Preheat oven to 375 degrees F.
  2. Combine the dry ingredients in a large bowl: almond flour, tapioca starch, baking powder, and salt.
  3. Whisk together wet ingredients in a separate bowl: coconut oil, coconut milk, orange zest, orange juice, maple syrup, and vanilla extract.
  4. Pour in wet ingredients to dry ingredients and mix together until just combined. Fold in pomegranate seeds.
  5. Wrap the dough in a plastic wrap and chill in the fridge for 5 minutes. Line a baking sheet with parchment paper.
  6. Once chilled, shape the dough into an 8-inch round circle on the parchment lined baking sheet and slice into 8 equal pieces. Separate the pieces so they are 2 inches apart.
  7. Bake for 22-27 minutes, until a toothpick inserted into the center comes out clean and the edges are golden brown.
  8. Cool for 15 minutes before glazing with either the orange sugar glaze or coconut glaze.

Frequently Asked Questions About Pomegranate Orange Scones

What can I used instead of almond flour?

I haven’t tested out these gluten free dairy free scones with another flour so I can’t say. A flour that works most like almond flour is cashews ground into flour if you want to use that instead!

Can I replace pomegranate seeds with another fruit?

Yes! Cranberries are a popular replacement if you want to make paleo and vegan cranberry orange scones instead. Another option is blueberries or any other berries!

How do I store leftovers?

You can store these pomegranate scones in an airtight container at room temperature for up to 3 days. They’ll last up to a week in the refrigerator, and they also freeze well for much longer!

Ingredients 

Orange Sugar Glaze

  • 1/2 cup powdered sugar
  • tbsp orange juice, freshly squeezed

Coconut Glaze (for Paleo)

Orange Sugar Glaze

  • Stir together powdered sugar and orange juice in a bowl until a glaze forms. You can add a splash of water if the texture is too thick.
  • Use a fork to drizzle over the scones. Sprinkle with orange zest if you like.

or Coconut Glaze (for Paleo)

  • Combining all ingredients and melt together in a microwave or a double boiler. Add a splash of warm water if the glaze is too thick and you want to thin it out.
  • Use a spoon to drizzle the glaze over the scones. Sprinkle with orange zest if you like.

    I was amazed by how good these were! I am not paleo and have no problems with grains, but I am vegan and I love finding recipes with secret protein hidden away (like with the almond flour here). I wasn’t expecting these to be so sweet with so little sweetener, or so tender! I would definitely make these again.

    I was so excited to make these scones this week, but my toddler woke up in a bad mood screaming at me to turn on the TV, and 2 tbsp of OJ turned into 2 oz. Epic fail. Iโ€™m going to try to salvage the batter and make a cake. And Iโ€™m totally not sharing with my son!
