What Makes This Recipe Great

I first started roasting tomatoes to make tomato soup, but I never thought to enjoy them on their own until recently. While using the oven can take up to 30 minutes, I found that I can make quick roasted tomatoes in the air fryer in a fraction of the time (just 10 minutes!) with the same amazing results!

With simple ingredients like ripe tomatoes, olive oil, salt, pepper, garlic, and fresh herbs, this is such an easy way to use up your produce for the perfect recipe! I’ve been making this air fryer tomato recipe weekly now while they are in season, and I just can’t get enough! Plus, they are healthy, paleo, vegan, Whole30-friendly, and low-carb as well!

This easy recipe is versatile and can be served so many different ways. Soups, dips, salads, your favorite pasta dish, or on toast- you name it! These tomatoes make a delicious appetizer, the perfect side dish, a snack, or an addition to pasta salads. Yum!

How to Make Air Fryer Tomatoes

I like to use cherry tomatoes for this recipe because they are slightly sweet with so much flavor. Plus, they cook quickly because they are small, and I find that whole roasted tomatoes taste much juicier. 

The ingredients list is short and simple, but you can use different spices like rosemary, thyme, or even Italian seasoning to make different variations. 

Ingredient Notes

  • cherry tomatoes or grape tomatoes: You can use larger tomatoes like Roma tomatoes, but I recommend cutting them into smaller pieces before cooking OR increasing the cooking time.
  • extra virgin olive oil: I’ve also used avocado oil with great success.
  • garlic
  • sea salt
  • ground black pepper
  • basil: I recommend fresh basil for the bright, summery flavor.

Step-by-Step Instructions

  1. If your air fryer needs preheating, preheat to 400 degrees F. This is the air fryer I have, and I use it for all my air fryer recipes.
  2. Add olive oil, garlic, salt, and pepper to the tomatoes and toss to coat. Place in the air fryer tray or the air fryer basket in a single layer for best results. For extra juicy tomatoes, use a tray or basket without holes, or line the bottom of the air fryer basket with aluminum foil or a piece of parchment paper.
  3. Air fry for 10 minutes until blistered and juicy.
  4. Remove from the air fryer and toss with chopped basil.
  5. Serve in soups, dips, salads, pasta, or on toast. It’s also the easiest side dish or a tasty addition to pasta sauce or pasta salad!

Serving Tips

They are so many ways to use air fryer cherry tomatoes! Here are some of my favorites:

  • Top on crusty toast spread with ricotta or goat cheese.
  • Add to salads.
  • Mix into pasta or risotto.
  • Add as a sandwich topping.
  • Blend into dips and hummus.
  • Add to soups or make roasted tomato soup.

Storage Tips

  • Store these air-fried tomatoes in an airtight container in the fridge for up to 2 weeks. Serve in your favorite dishes, and enjoy! 
  • To reheat, drizzle a bit more olive oil on top and warm up in the microwave or in the air fryer. 
  • To freeze, cool completely, then add to a freezer bag removing as much air as possible. Freeze for up to 6 months.
