If you’re not on board yet, let me convince you that air fryers are magical kitchen appliances that seem to have no limits at all! In my latest recipe, my air fryer turned raw shredded potatoes into crispy breakfast hash browns in less than 15 minutes with super simple steps and ingredients! 

These air fryer hash browns are an amazing breakfast side that goes perfectly with my other easy breakfast recipes pork breakfast sausage, these baked eggs, or alongside your favorite breakfast staples. Dip in ketchup (or don’t!) and enjoy these deliciously crispy potatoes on a lazy Sunday morning or even a weekday (they’re that easy!).

All you need are fresh or frozen potatoes, some butter, salt & pepper, and that’s it. You will love them, your kids will love them, and even better, they’re just so easy! No frying pan, no oil mess, just such an easy way to make the best breakfast side dish!

Ingredient Notes

  • Fresh Potatoes: I like Russet potatoes because they result in the crispiest outer shell, but this recipe will work with Yukon gold in a pinch. 
  • Ghee: You can also use regular butter or vegan butter. 
  • Salt & Pepper: Use to taste. 

Step-by-Step Instructions

  1. Preheat the air fryer to 380 degrees F, and grease the air fryer basket or tray generously with avocado oil, olive oil spray or your preferred cooking spray.
  2. Using a box grater, shred the potatoes on top of a tea towel.
  3. Roll the potato shreds in a long log in the towel, and twist tightly to squeeze out as much moisture as you can. Transfer the potato shreds to a bowl.
  4. Add ghee, salt, and pepper to the potatoes, and toss to coat.
  5. Transfer the potatoes to the air fryer basket or tray, and pat down tightly into an even layer with a spoon. 
  6. Air fry for 13-15 minutes until golden brown and crispy. For extra crispy results, add a minute or two to the time. You don’t need to flip. Enjoy!

Expert Tips

  • Skin On: You can peel the potatoes if you want, but I just scrub them really well and then shred them with the skin on.
  • Moisture: Don’t forget to squeeze out the moisture from the potatoes to make sure you have crispy hash browns.
  • Frozen Hash Browns: If you are using frozen shredded hash browns, the cooking time is the same. No need to defrost.
  • Additional Seasonings: Feel free to add any other seasoning of your choice, like smoked paprika, garlic powder, and/or onion powder. 
  • Equipment: This recipe works in a basket-style air fryer or oven-style. Make sure to line the bottom with aluminum foil or parchment paper if the holes are too big on the tray.
  • Well Done: For extra crispy hash browns, I recommend air frying them for 2-3 minutes longer, depending on your personal preference.

Serving Tips

  • Balanced Meal: Serve this delicious side dish alongside your favorite breakfast protein like eggs, sausage, or bacon, and healthy fat like sliced avocado for a quick breakfast that’s filling and delicious.
  • Fruit: You can even add some berries or sliced melon for a serving of fruit with this balanced breakfast.

Storage Tips

  • If you have leftovers, store them in an airtight container in the refrigerator for up to 3-4 days. Reheat your hash browns in the air fryer for 4-5 minutes at 380 degrees F until warm and crispy.

You’ll want to eat them in moderation, but homemade hash browns are a healthier option for a few reasons. 1. You control the sodium! If you need to use less salt, please do. Packaged hash browns typically contain a ton of sodium. 2. There are no preservatives or artificial ingredients. 3. Instead of being pan-fried in tons of oil, these are air fried with just a little cooking spray and ghee.

Why aren’t my hash browns crispy?

Be careful not to overcrowd your air fryer! Place your potatoes in a thin single layer in the basket so they get nice and crispy.
