I’m usually not a huge fan adding fruits to savory recipes. I don’t know why. I think it’s just something I’m not used to and my parents never added fruits to recipes growing. But, with the abundance of fruits I’ve been seeing at the farmers market, I couldn’t not try to add them into all the things I’ve been cooking, and this Peach and Bacon Paleo Flatbread recipe just might have changed my mind about the way I feel about fruits in savory dishes.

When I first decided to cook with peaches, my first thought was, “I bet it’ll be AMAZING with bacon!” But then again, what isn’t? I used this amazing combo to make a paleo flatbread recipe that I’m pretty much obsessed with. The salty and sweet and combo is so addicting, and there are so many awesome textures that work so well together: soft peach, crispy bacon, and creamy cauliflower cashew cheese, all over a soft but sturdy flatbread dough that you wouldn’t believe is grain free.

Cassava Flour Flatbread Dough

The base of this paleo flatbread is made with cassava flour, which I’ve been using more and more of in my cooking. It’s made from cassava root, which is a starchy vegetable, and it’s one of my favorite paleo flours that resembles wheat flour the most out of any grain-free flours I’ve used.

The cassava flour dough turned out sturdy and crispy, and if you love thin crust pizzas, you’ll be obsessed this Peach and Bacon Paleo Flatbread!
