Ingredients You’ll Need

  • Ground Pork: 1 lb of high-quality ground pork (heritage pork is a great choice for extra flavor).
  • Fresh Herbs: Finely chopped sage and thyme provide that classic “breakfast” aroma.
  • Warm Spices: A hint of nutmeg and a pinch of cloves add a sophisticated depth of flavor.
  • Pantry Staples: Sea salt, garlic powder, and onion powder.
  • Cooking Oil: Avocado oil, or your favorite neutral-flavored oil for pan-frying.

How to Make Breakfast Sausage From Scratch

Step 1: Combine and mix together all ingredients, except avocado oil, in a large bowl.

Step 2: Divide and form into 8 mini patties.

Step 3: Heat avocado oil in a large skillet over medium high heat. Place the patties in skillet and cook 5 minutes per side.

Expert Tips for the Best Results

  • Don’t Overmix: To keep the sausage tender, mix the spices until just combined. Over-mixing can lead to a tougher texture.
  • Get a Good Sear: Make sure your skillet is hot before adding the meat. This ensures that “caramelized” outer crust that makes these sausages so addictive.
  • Dry vs. Fresh Herbs: If you don’t have fresh sage or thyme, you can use dried herbs. Just remember to use about 1/3 of the amount, as dried herbs are more concentrated.

Flavor Adjustments

  • If You Want More Heat: Add about 1/2 tsp of red pepper flakes and some ground black pepper to the spice mixture, to taste. I originally made these nightshade free so I didn’t include those spices, but feel free to adjust depending on your preference.
  • If You Want to Add Sweetness: Add 1-2 teaspoons of brown sugar or maple syrup to the meat mixture.

Storage and Freezing Instructions

  • To Store: Keep leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet for a minute or two to heat back up, or you can microwave until heated through.
  • To Freeze: These are excellent for “emergency” breakfasts. Freeze the cooked patties in a single layer on a baking sheet, then transfer them to a freezer bag. They will stay fresh for up to 3 months. Simply defrost in the fridge overnight and reheat when ready to eat!

Ingredients 

  • 1 lb ground pork
  • 1 tsp sea salt
  • 2 tsp fresh sage, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp ground nutmeg , Omit for AIP
  • Pinch of ground cloves
  • 1 tbsp avocado oil, or your favorite cooking oil

Instructions 

  • Combine and mix together all ingredients, except avocado oil, in a bowl.

    I don’t normally leave reviews but I’ve made these twice now!! They were a lifesaver as I’ve started AIP. They are so delicious and get that caramel-brown crust on the outside. I store them in the freezer and just microwave for a minute before eating, or throw them into an AIP breakfast hash. Thanks!!!
