- Heavy Cream: Some recipes add cream cheese or cool whip, but I like the lightness of a classic whipped cream.
- Powdered Sugar: This is used to lightly sweeten the whipped cream mixture.
- Vanilla Extract
- Graham Crackers: I’m gluten free so I used gluten free graham crackers. You can use any brand you want!

Step-by-Step Instructions: How to Make a Strawberry Icebox Cake
- Combine heavy whipping cream, powdered sugar, and vanilla extract in a large bowl, and use a stand mixer or an electric hand mixer to whip until stiff peaks form.
- In an 8×8 baking pan, cover the bottom of the pan with a thin layer of whipped cream.
- Add a single layer of graham crackers, cutting them if needed to cover the pan.
- Spread 1/3 of the whipped cream on top of the graham crackers, then spread 1/3 of the strawberry slices on top.
- Repeat steps 3 and 4 two more times to create three layers total.
- Cover the dish with a plastic cling wrap and chill in the fridge for at least 4 hours to overnight.
- Slice and serve cold.
