Ever since I’ve had the Instant Pot in our kitchen, recipes that seemed like so much work and time are way, way easier. This Whole30 Instant Pot BBQ pulled pork is one of those recipes. I love a classic pulled pork, especially in the summer, and the leftovers can be enjoyed in so many different ways.

Whole30 Instant Pot BBQ Pulled Pork Recipe

This Whole30 BBQ pulled pork is made using date-sweetened barbecue sauce that’s tangy and flavorful. Cooking pulled pork in the Instant Pot is way quicker than using the slow cooker or the smoker, and the result is incredibly tender and juicy. It just takes 1 hour of cook time, and so easy to prepare!

How to Make Whole30 Pulled Pork in the Instant Pot 

Ready to make the best Instant Pot pulled pork ever? The instructions for this recipe are easy to follow and you’ll have delicious, perfectly cooked Whole30 BBQ pulled pork in no time.

  1. Before starting, make my tangy Whole30 BBQ sauce. It only takes 15 minutes to make! If you have another BBQ sauce on hand that you want to use instead, that’ll work as well.
  2. Cut the pork shoulder into 2-3 inch pieces, then add dry rub spices to all sides of the meat.
  3. Sear the meat on all sides in the Instant Pot using the SAUTÉ setting. You’ll have to do this in 2-3 batches.
  4. Add all the pork in the Instant Pot liner and stir in broth and BBQ sauce.
  5. Cook on MANUAL for 60 minutes, then naturally release pressure.
  6. Transfer the pork to a separate bowl and use two forks to shred it. To cut down on time, you can use a stand mixer to easily shred the pork.
  7. While you shred the pork, turn the Instant Pot on to SAUTÉ to simmer the sauce to thicken and reduce it by a half.
  8. Add the shredded pork back into sauce, and stir together.
  9. You can serve the Whole30 pulled pork as is, or add more BBQ sauce before serving.

How to Save Leftovers

I love that making this Whole30 and paleo pulled pork in the Instant Pot yields about 8 servings. If you are not serving a crowd, that means a good amount of leftovers! Luckily, the leftovers save and reheat extremely well and tastes like it’s just been cooked. This yummy Whole30 pulled pork will last chilled in the refrigerator for 4-5 days.

To freeze, cool completely and then place in a freezer safe-container or resealable bag. When properly stored, it will last in the freezer for 6-8 months.

Ways to Serve Whole30 BBQ Pulled Pork

There are so many ways to enjoy this tender and flavorful low carb pulled pork. Here are some ideas:

Ingredients

  • 4 lb boneless pork shoulder
  • 2 tbsp avocado oil or ghee
  • 1 cup bone broth or chicken broth
  • 1 cup Whole30 BBQ Sauce plus more to serve

Dry Rub

  • 2 tsp sea salt
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp ground black pepper

Instructions

  • Before you begin, make the Whole30 BBQ Sauce, or have another BBQ sauce you like on hand.
  • Cut the pork into 2-3 inch pieces.
  • Stir together all the dry rub ingredients in a small bowl, and toss with the pork pieces so they are coated all over.
  • Set the Instant Pot to SAUTÉ and add the oil.
  • Once the Instant Pot indicates that it's "hot," add the pork pieces in a single layer and brown all sides. You may need to do this in 2-3 batches and each batch will take about 5 minutes.
  • Add all the pork back to the Instant Pot, then add broth and BBQ sauce. Stir together.
  • Close the lid, set the pressure valve to SEALING, and set it to MANUAL for 60 minutes.
  • Once the Instant Pot beeps to a finish, let the pressure release naturally for 15-20 minutes.
  • Remove the lid and use a slotted spoon to remove the pork to a large bowl.
  • Set the Instant Pot to SAUTÉ and let the sauce simmer for 15 minutes, or until it's reduced by half.
  • While the sauce is simmering, use 2 forks to shred the pork.
  • Turn off the Instant Pot and add the pork into the reduced sauce.
  • Stir to coat, and serve with more Whole30 BBQ sauce for a stronger flavor.
