I’ve already shared apple blondies and chocolate chip blondies so it only felt right to add these pistachio blondies to the lineup. Pistachios bring such a rich, naturally nutty flavor to desserts, and these blondies let that flavor really shine. The pistachio butter adds depth and subtle sweetness, turning a simple dessert bar into something that feels a little extra special.

Another reason these bars are a favorite is that they’re so easy to make. Everything comes together in one bowl with simple pantry ingredients, making them perfect for a quick baking project or an easy dessert when you have guests coming over.

  • Granulated sugar: Sweetens the bars and helps create the classic dense blondie texture. Coconut sugar can be used for a slightly deeper flavor.
  • Sea salt: Balances the sweetness and enhances the pistachio flavor. Fine salt or kosher salt works as well.
  • Vanilla extract: Adds warmth and depth of flavor to the batter. Vanilla bean paste can also be used.
  • Large eggs: Bind the ingredients together and contribute to the chewy texture. Room‑temperature eggs mix more easily into the batter.
  • Gluten-free all-purpose flour: Gives the blondies structure while keeping them gluten-free. Use a blend that already contains xanthan gum for best results.
  • Optional: White chocolate chips and/or roasted pistachios. Fold these in for extra texture and flavor – white chocolate adds creamy sweetness, while roasted pistachios bring a satisfying crunch. Use one, both, or leave them out depending on the texture you prefer.

How to Make Gluten-Free Pistachio Blondies

Step 1: Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper. In a large microwave-safe bowl, combine the butter, white chocolate, and pistachio butter. Microwave in 30-second intervals until melted, or melt using a double boiler. Stir until smooth.

Step 2: Add the sugar, sea salt, and vanilla extract. Stir until combined.

Step 3: Add the eggs and whisk until the mixture is smooth.

Step 4: Fold in the gluten-free flour until just combined. Do not overmix the batter. Gently fold in chopped pistachios if using.

Step 5: Transfer the batter to the prepared baking dish and smooth the top.

Step 6: Bake for 25-30 minutes until the edges are lightly golden and the center is set. The middle may still look slightly soft but will firm up as the blondies cool. Let the blondies cool completely before slicing into 16 squares.

  • Don’t Overmix the Batter: Once you add the flour, mix just until combined. Overmixing can make blondies dense or tough instead of soft and chewy.

  • Tip for Clean Slices: If you want perfectly clean squares, chill the blondies for about 20 minutes before cutting.

Ingredients

  • Preheat oven to 350 degrees, and line an 8×8 baking dish with parchment paper. Add butter, white chocolate, and pistachio butter in a large microwaveable bowl. Microwave for 30 seconds at a time, or use a double boiler until the butter is melted and the white chocolate pieces are softened. Remove from heat and stir.
    1/4 cup + 2 tbsp butter, 8 oz white chocolate bar, 1/2 cup pistachio butter
  • Add sugar, salt, and vanilla extract, and stir to mix.
    1/2 cup granulated sugar, 1/2 tsp sea salt, 2 tsp vanilla extract
  • Add in eggs, and whisk until smooth.
    2 large eggs
  • Fold the flour in until just combined. Don't over mix.
    1¼ cup gluten free all-purpose flour
  • Gently fold in pistachios and/or white chocolate chips, if using. Transfer to the prepared baking dish, flattening out the top. Bake for 25-30 minutes, until light browned on the edges and set in the middle. The middle may seem a bit soft, but it'll firm up as it cools.
    OPTIONAL: 1 cup chopped roasted pistachios or white chocolate chips
  • Cool completely, then slice into 16 squares. Enjoy!
