With these crispy buffalo chicken tacos you get all the flavor of buffalo wings in a crunchy corn tortilla, baked in the oven in about 30 minutes. The filling is super simple: just shredded rotisserie chicken tossed with buffalo sauce and a few seasonings, topped with cheddar, then folded and baked until the shells are golden and crispy (no slow cooker or Instant Pot needed). 

The recipe is gluten free with corn tortillas and makes 12 tacos, enough for a weeknight dinner or a game day crowd. We love buffalo wings at our house, and even my kids love these, so they’re in regular weeknight rotation (and not too spicy!).

Why You’ll Love These Buffalo Chicken Tacos

If you like buffalo wings, you’ll love these tacos. Same addicting buffalo flavor, but the crunchy baked shell gives you that crispy crunch without a fryer, and there’s no sauce-covered bones to deal with. Win/win!

They’re also SO simple. Because you start with pre-cooked chicken (I used rotisserie chicken to make it even easier), everything comes together quickly in the oven. No slow cooker, no Instant Pot, no waiting around for hours like a lot of other buffalo chicken taco recipes out there. That’s it.

If you’ve made my crispy oven baked tacos with Taco Bell copycat beef, this is the same easy sheet pan method with a buffalo chicken twist. And the creamy avocado cilantro sauce for dipping? It takes them over the top.

Ingredient Notes

  • Shredded chicken: Any cooked, shredded chicken works, but rotisserie chicken is my favorite shortcut. If you’d rather cook your own, my air fryer rotisserie chicken with crispy skin is easy and gives you plenty of leftover meat for recipes like this one.
  • Buffalo sauce: I used Frank’s RedHot buffalo sauce. You can make your own, but I usually use premade sauce to keep this even more quick and easy. See the variations below if you want to go homemade.
  • Corn tortillas: I used corn tortillas to keep these gluten free, and they bake up nice and crunchy. Flour tortillas can be used as well if gluten isn’t a concern for you.
  • Shredded cheddar: The cheese isn’t just for flavor here. It’s the glue. It melts during the first bake and holds the folded tortilla shut, so grab a little extra in case some tacos need more.
  • Cooking spray: A quick spray over the folded tacos is what gets the tops golden and crispy in the oven without frying. Don’t skip!
  • Creamy avocado cilantro sauce: Optional, but I highly recommend it for dipping or drizzling. The flavor combo is wonderful, and the crunchy tacos with the cool, creamy sauce is such a great balance. Grab the recipe for my creamy avocado cilantro sauce and make it first so it’s ready when the tacos come out of the oven.

Recipe Variations

  • If you don’t need these to be gluten free, flour tortillas work too. Fold and bake them the same way.
  • To make your own buffalo sauce, whisk hot sauce with melted butter, or ghee if you’re dairy free – it’s the same simple combo I use for my air fryer buffalo cauliflower bites. Homemade lets you control the heat and the tang.
  • If you’re a ranch person, my homemade dairy-free ranch dressing is a classic pairing with anything buffalo. Blue cheese dressing or crumbles work the same way.
  • To make these spicier, add pickled jalapeños on top, mix a pinch of cayenne into the filling, or serve with extra buffalo sauce for dipping.
  • Pepper jack or Monterey Jack should melt just as well as cheddar, though I haven’t tested them in this recipe, so I can’t say for sure how well they hold the tacos closed.
  • I haven’t tested a dairy-free cheese in these yet, so if you try it, let me know how it goes in the comments!

How to Make Crispy Buffalo Chicken Tacos

Step 1: If you’re using the creamy avocado cilantro sauce, make a batch first. Preheat the oven to 375 degrees F, line a large baking sheet with parchment paper, and spray the parchment with cooking spray.  In a large bowl, mix together the shredded chicken, buffalo sauce, garlic powder, sea salt, and black pepper until every shred of chicken is coated.

Step 2: Lay the tortillas out on the baking sheet. They can overlap a bit, and you may need to bake in 2 batches depending on the size of your pan. Spread about 1/4 cup of the chicken mixture over one half of each tortilla.

Step 3: Sprinkle about 1-2 tablespoons of cheese over the chicken on each tortilla, then bake for 5 minutes. This short bake is my secret. The cheese melts into the chicken, and the tortillas soften up so they fold without cracking!

Step 4: Remove the pan from the oven and fold the empty half of each tortilla over the filling. Press down firmly so the tortilla sticks to the melted cheese. Spray the tops of the folded tacos with cooking spray, then bake for another 15-20 minutes until the shells are crispy and golden at the edges.

Step 5: Serve warm with the creamy avocado cilantro sauce and your favorite toppings. I like green onions, red onions, cilantro, and a squeeze of lime.

Recipe Tips

  • Cold corn tortillas crack when you fold them. The first bake softens them and melts the cheese so the tacos fold cleanly and stay shut, so don’t skip that part.
  • About 1/4 cup of chicken per taco is the sweet spot. More than that and the tortilla won’t seal, and the filling slides out when you fold it.
  • The melted cheese is what holds each taco closed, so give the folded side a good press before it goes back in the oven.
  • The tortillas can overlap a little, but if they’re crowded and piled up, they steam instead of crisp. A second batch is worth the extra 20 minutes.
  • The light coating of oil on the outside of the folded tacos is what turns a soft tortilla into a crunchy shell. No frying required.
  • They’re crispiest straight out of the oven, though leftovers crisp back up nicely with the reheating tips below.

Storage Tips

  • Store leftovers in an airtight container in the fridge for 3-4 days.
    • To reheat in the oven: Bake at 350 degrees F for 8-10 minutes until warmed through and crisped back up.
    • To reheat in the air fryer: Air fry at 350 degrees F for 5-10 minutes until warmed through and crispy again. This is the faster option if you’re only reheating a few.
  • Make ahead: The chicken filling can be mixed up to a day ahead and kept in the fridge, so all you have to do at dinnertime is fill, fold, and bake. I don’t recommend assembling the tacos ahead of time, since the tortillas get soggy sitting with the sauce.
  • Freezer: You can freeze the buffalo chicken filling alone (not assembled tacos) for up to 3 months. Thaw, warm, and assemble when you’re ready to eat!

With Frank’s RedHot, they have a medium kick. More tangy than fiery, and my kids happily eat them. For milder tacos, use a little less sauce, and for more heat, add pickled jalapeños or a drizzle of extra buffalo sauce on top.

Can I use leftover chicken instead of rotisserie?

Absolutely. Any cooked, shredded chicken works, whether it’s leftover baked chicken breasts, poached chicken, or extra meat from a roast chicken. You need about 4 cups.

Ingredients 

  • 4 cups shredded chicken, I used rotisserie
  • 1 cup buffalo sauce, I used Frank’s Red Hot
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

  • 1 cup shredded cheddar, plus more if needed
  • Cooking spray

Instructions

Notes

  • Don’t skip the first 5-minute bake before folding – it softens the corn tortillas so they fold without cracking and melts the cheese so the tacos stay closed.
  • Stick to about 1/4 cup of filling per tortilla so the tacos seal and stay crispy.
  • If the tortillas are crowded on the pan, bake in 2 batches so they crisp instead of steam.
  • Flour tortillas can be used in place of corn if you don’t need these to be gluten free.
